The outdoor fermentation, carefully monitored, delivers a beautiful intensity of floral and spice notes, further enhanced by six months ageing in French oak. It’s a remarkably fresh and complex wine, perfect alongside a hearty roasted pork dish, accentuating its lovely acidity.
