This Aalto PS, hailing from Castile and León, is a beautiful demonstration of the virtues of patience. The Tempranillo grapes matured with a remarkable intensity, reminiscent of rock candy and Chinese ink, thanks to the exceptional terroir – specifically those 42 hectares of vines aged between 60 and 100 years. Enologist Mariano García’s innovative approach allowed the wine’s initial power to mellow wonderfully during its time in 50% new and one-year-old oak barrels, resulting in a truly surprising harmony. As the creator notes, it “needs a few more years” to reach its full splendour, but promises even greater complexity from the third year onwards – ideally paired with grilled beef or a dish featuring wild mushrooms.
