Made from the most typical Alentejo grape varieties grown in the Borba sub‑region, the Rótulo Cortiça wine is a true ex‑libris of the Adega de Borba. Harvested from old vines, the grapes were rigorously monitored throughout ripening and picked in small batches. At the winery, after destemming and gentle crushing, alcoholic fermentation began and lasted about 10–15 days at a controlled temperature of 24 °C, maximizing the extraction of fruity aromas and flavours. To boost polyphenolic complexity, tannins, and structure, the wine underwent post‑fermentation maceration in a tank. Malolactic fermentation followed in stainless‑steel vessels. To enhance and elevate its organoleptic qualities, the wine was aged for 12 months in 3rd‑ and 4th‑year French oak barrels and in exotic wood casks. Afterward, it spent six months bottle‑aging in a cellar. The aroma is fine and elegant, evoking black fruits, compote, and white chocolate.
