Adega Mayor Harvest Between August and September Enologists: Rui Reguinga, Carlos Rodrigues and Bruno Pinto Vinification The grapes are harvested at the ideal moment of ripeness. Hand‑picked, they are taken to the winery where they undergo meticulous selection, are destemmed and crushed. After 24 hours of cold static settling, the must is pumped and inoculated with selected yeasts that carry out alcoholic fermentation at a controlled 15 °C for about two weeks. At the end of this first fermentation a neutral base wine for sparkling is produced, yet with prominent acidity. In the second phase, the “Traditional” or “Classic” method is applied: a second fermentation takes place inside the bottle for roughly two months, during which yeasts convert sugar into alcohol and release carbon dioxide, creating the sparkling wine’s “perlage”. The wine then undergoes autolysis and aging for about 24 months in a cellar, finishing with the removal of impurities (lees) through manual “remuage” and machine “degorgement”.
