This sparkling wine from Adegamãe, crafted with Arinto and Chardonnay, clearly benefited from a rather fussy upbringing – fifteen days of gentle, cool alcoholic fermentation, followed by a generous dose of lees stirring. After eighteen months ageing on its own lees, it needed just a final flourish.
