This Gratallops 2016 is a truly remarkable statement from Álvaro Palacios – a wine that genuinely surprised him, showcasing an unusual floral and aromatic complexity for his style. Primarily Garnacha, with its characteristic Mediterranean herb notes and red berry nuances, is elevated by a subtle hint of fennel, thanks to a natural fermentation using indigenous yeasts. Despite the exceptionally hot and dry vintage, and the remarkably low pH, the result is a wine that, according to the winemaker, perfectly embodies the character of the Vila do Xil. Produced in a limited run of just 18,900 bottles, bottled in April 2019, it’s a wine best enjoyed alongside a hearty grilled beef dish with roasted potatoes – a pairing that really allows its richness to shine.
