Description

This red wine from Domínio D’Echauz stems from a batch of eight ancestral biotypes recovered by the Basajaun project, developed by the Vitis Navarra nursery in pre‑filoxenic vineyards later planted at Domínio D’Echauz for conservation. With a predominance of Tempranillo and a much smaller contribution from Cabernet and Garnacha, the wine ages for seven months in French and Austrian oak barrels and is uniquely fermented in both stainless steel and concrete. It delivers notes of black and red fruits, making it ideal for pairing with aged cheeses, stews and mature meats.
