Anselmo Mendes White wine: Anselmo Mendes Curtimenta is made exclusively from Alvarinho grapes grown in Monção and Melgaço. The grapes exhibit high acidity and good ripeness, sourced from older vines over 14 years old. It is produced using traditional methods, extracting more colour and tannins through contact with the skins during vinification—a unique way to fully explore Alvarinho’s potential. **Vinification** The grapes are hand‑picked in small baskets and transported to the cellar within a short time. Skin maceration is followed by fermentation with the skins for several hours. Fermentation is finished in used 400‑litre French oak barrels. In those same barrels the wine undergoes bâtonnage for nine months on total lees. It then ages for twelve months in bottle. **Designation** DOC Vinho Verde Alvarinho, Monção e Melgaço. Acceptable ageing: 15 years. **Food pairing** Curtimenta pairs well with richer fish and shellfish dishes; stuffed crab, honey‑and‑coconut breaded shrimp, and Galician octopus with crispy potatoes are all excellent matches.
