This Pardusco, a revival of a lineage stretching back to the 14th century, feels as though it’s sprung straight from an ancient cellar – with a touch of daring, of course. Crafted with hand-picked grapes and full délestage, it beautifully showcases the Vinhão and Verdelho grapes. A subtle micro-oxygenation in Alvarinho barrels – just 12 hours – adds remarkable aromatic complexity, revealing ripe red fruits alongside hints of smoke and cedar. On the palate, the vibrant acidity and concentration of red fruit are balanced by mineral notes of leather and earth, culminating in a long, silky finish that’s undeniably elegant. Ideal with black pork.
