This Arrepiado Amma Reserva clearly benefited from a very careful approach. The hand-harvested grapes, using 25kg boxes, point to a truly close-to-the-earth process, and the selection made at the table suggests a discerning palate. The “estalar o bago” – stem removal – demonstrates a genuine respect for the Cabernet Sauvignon grape, in pursuit of pure fruit expression. The spontaneous fermentation coupled with a 21-day maceration promises a layered complexity, and would pair beautifully with a hearty beef roast.
