Bafarela Vinification: The harvest took place in September. With rigorous selection in the vineyard, the grapes were fully destemmed and crushed. A pre‑fermentative cold pellicular contact was carried out for 48 hours. Fermentation took place in stainless‑steel tanks at controlled temperature, accompanied by a total maceration of over 40 days but without excessive extractions. Afterwards, the wine moved to stainless‑steel tanks where malolactic fermentation occurred. It aged for 10 months in 500‑liter French oak barrels, of first, second and third use. Serving and Consumption Suggestions: Bafarela Reserva is a surprising wine that pairs very well with traditional Portuguese dishes, a variety of meats, cheeses and hearty pasta dishes. It also works nicely as an aperitif with cured and spicy cheeses. Open it a little before serving to let it breathe and develop at its best. Over time it may form sediment, so decanting is recommended. Allergen Information: Contains sulfites.
