This Baton from the Douro certainly had a lively fermentation – a little too enthusiastic, perhaps! Extended maceration and those “gentle” pump-overs (let’s be honest, they were probably quite persistent) have produced a vibrant ruby colour with lovely violet undertones. Initially bursting with blackberry and blueberry, the wine quickly reveals notes of spice and a hint of tobacco, hinting at a fascinating terroir. A notable acidity provides a refreshing lift that lingers beautifully on a structured finish, ideally paired with grilled meats or a mushroom risotto for a delightful contrast.
