Borges total defrosting of the grapes followed by gentle crushing. Part of the lot is vinified initially by the traditional step‑grinding method, finishing fermentation in stainless steel, while the remaining lot is vinified only in stainless steel. Both processes include a brief pre‑fermentative maceration, followed by 6‑8 days of fermentation at a controlled temperature of 28‑30 °C with relatively frequent overruns. After the alcoholic fermentation, a maceration period takes place, after which the wine is separated from the solids with which it was fermented, and finally malolactic fermentation is induced. All stages are completed in French oak barrels for 30 months and an additional 4 months in bottle.
