Borges Destemming of the whole grapes followed by gentle crushing. Brief pre-fermentation maceration, followed by fermentation on the skins for 6–8 days at a controlled temperature of 28 ºC, with relatively frequent pump-overs. After alcoholic fermentation, a post-fermentation maceration period is carried out, after which the wine is separated from the solids it fermented with, and malolactic fermentation is induced.
