This Cabeça D’Velho clearly wanted to be cautious, opting for a remarkably gentle approach with the grapes – essentially, a delicately-handled crush, reminiscent of a silk-clad elephant. The cold maceration, limited to just 24 hours, ensures the characteristic aromas of red berries and spices, coming from the Jaen and Touriga Nacional grapes, remain wonderfully restrained. The result is a fresh, vibrant wine with good acidity, perfect for pairing with richer cuts of beef, such as a grilled ribeye, to beautifully balance the wine’s intensity.
