**Cabo da Roca – WINE DESCRIPTION** The vineyard is situated 40 km from the Atlantic coast, at an altitude of 20 m, and is about 30 years old. It averages a yield of 5 tons per hectare, with a planting density of roughly 3,800 vines per hectare. The rows run north–south. **TENDING SYSTEM** Single cordon training. **CLIMATE AND SOIL** Strong Atlantic influence, with a predominance of alluvial soils that contrast with the limestone‑rich slopes. **VINIFICATION** The grapes are destemmed and crushed directly into the vat, followed by three days of cold maceration. Alcoholic fermentation occurs at 24 °C to preserve the fruit’s aromatic expression. Malolactic fermentation is carried out in used French oak barrels. **MACHO** Six months of aging in used French oak barrels, accounting for 50 % of the batch. **PAIRING SUGGESTIONS** Bulhão Pato clams, oysters, grilled fish, aged cheeses, and ham. **Allergen Information** Contains sulfites.
