“This Campolargo Os Corvos – aptly named, considering the rebellious fermentation it clearly underwent – is a fascinating wine from the Bairrada. The winemakers wisely let the grapes dictate the process, relying on careful fermentation in small vats and a gentle, mechanical press. The result is a compelling blend of Syrah’s strength with the elegant touch of Merlot, underpinned by the robust character of Aragonez. Ten months aging in used barrels have added a luxurious texture, while the Bairrada’s signature mineral-rich terroir provides a wonderfully solid foundation. Seriously, it’s begging for a good grilled beef steak or a hearty stew.”
