Carlos Raposo’s Definidos range was created to showcase the immense potential of the Dão. They are delicate, precise, and authentic wines crafted for discerning enthusiasts who value originality and character. With excellent bottle‑aging potential, the whites stand out for their mineral freshness, while the reds boast fresh fruit, forest, and spice aromas. The Definidos are, in part, the “younger siblings” of the Imperfect Wines. The grapes come from various Dão sub‑regions, with vine ages ranging from 60 to over 100 years. Many are monovarietal, while others blend a wide array of regional varieties such as Encruzado, Malvasia Fina, Uva Cão, Rabo de Ovelha, Branda, Barcelo, and Douradinha. Because white grapes are more disease‑prone and most aromas lie in the skins, meticulous selection in the vineyard was essential to ensure final quality. **Vinification:** Grapes from different sub‑regions were carefully chosen both in the vineyard and the winery. The must was gently extracted via pneumatic pressing and naturally clarified at low temperature. Fermentation occurred in French oak barrels and, partially, in old 1962 cement vats where malolactic fermentation also took place. After numerous tastings and selections, Definido Branco emerged. **Stage:** A small portion aged in French oak barrels; the remainder in cement vats. **Pairings:** Roasted fish, shellfish, seafood rice, white meats, sushi. **Vegetarian options:** Tuber dishes (turnip, sweet potato, beetroot), Caesar salad, cheese dishes.
