They are gastronomic wines, designed to be appreciated by all who value fine and balanced wines. “Pure citrus, slightly herbal, lovely floral notes, salty. Like stepping into a spring garden by the sea. Also very salty on the palate, with a long finish. The texture is intense. The slight bitterness adds freshness – “as Chassagne” suggests Raposo. A bit salty, super dry. It grips the mouth on its journey through the palate. Huge freshness and steel intensity at the end. Reduction in the cellar, not in the bottles.” – Julia Harding VITIFICATION The grapes, from the Senhorim sub‑region, were hand‑picked and transported in 15‑kg boxes to preserve their integrity. They were then gravity‑directed straight to the press, where they were slowly pressed, allowing extraction and preservation of primary aromas. After a 24‑hour cold decantation in stainless‑steel tanks, the must fermented with indigenous yeast natural to the grape, without adding chemicals and with temperature control. It then underwent a prolonged 11‑month ageing in French oak barrels, giving the wine greater structure and complexity. PAIRING Oysters, baked fish, poultry and white meats.
