Carm A white wine full of class: elegant, fresh, and complex. Derived from Vinhas Velhas in the Upper Douro. WINEMAKING: In the cellar, the latest technology and full temperature control are employed. Bunches not in perfect condition are removed. The grapes are vinified with total destemming, followed by gentle crushing and about 12 hours of pellicular maceration. After this period, under an inert atmosphere, the wine is pressed with a pneumatic press, followed by a clarification period of 24 to 48 hours, depending on the variety and maturity. The fermentation is done in hyper‑reduction, at 12 °C, and the wine is pumped under controlled atmosphere. The wines age sequentially in stainless steel and French oak barrels over fine lees (bâtonnage) until bottling. AGEING: 50 % in stainless steel and 50 % in French oak barrels for 8 months, on fine lees. Allergen information: Contains sulfites. SKU: 107606
