Vinification: total destemming, gentle crushing and thermal shock, followed by a period of pre‑fermentative cold milling for about 12–24 hours, after which the musts were transferred to shallow, wide vats where they fermented for about 10 days at temperatures between 24 °C and 26 °C. Malolactic fermentation occurred naturally, concluding in late December, during which the wine underwent this fermentation in oak. Until July, part of the wine is in stainless‑steel and part in American and French oak barrels.
