This Carm, from Casa Agricola Roboredo in Madeira, is a wine that clearly enjoys a good dose of freshness. Crafted with almost obsessive precision – complete délestage, gentle crushing, extended skin contact – it’s a wine that truly revels in its minerality, offering bright citrus and floral notes that belie its youthful exuberance. The careful fermentation, held between 12 and 14°C, coupled with daily battonage, delivers a wonderfully voluminous mouthfeel. And that boldly refreshing, lingering finish?
