Description

CARM WINE It was vinified in our cellar at Quinta das Marvalhas, in Almendra, right in the heart of the Superior Douro. We selected grapes grown on very old vines in the Superior Douro of the varieties Códega do Larinho, Rabigato and Viosinho. VINIfiCATION In our cellar, with the most modern technology and full temperature control, we removed clusters that were not in perfect condition. The grapes were vinified with complete de-stemming, followed by gentle crushing and skin maceration for about 12 h. After this period, under an inert atmosphere, we performed pneumatic pressing, then a clarification period of 24 to 48 h depending on the variety and ripeness. The winemaking was done in hyper‑reduction, fermentation at 12 °C, and racking under controlled atmosphere. The wines then aged alternately in stainless steel and French oak barrels on fine lees until bottling. Maturation: 50 % in stainless steel and 50 % in French oak barrels for 8 months on fine lees.
