This Enxertia from Casa da Passarella in the Dão is a delightfully unpredictable wine, born from an Alfrocheiro that apparently threw a party in 2011. The spontaneous fermentation in concrete tanks yields notes of black pepper alongside red fruit, all underpinned by a terroir that refuses to be tamed. A truly elegant wine, benefiting from 18 months of aging – 12 in oak and 18 in bottle – it's a testament to the house’s dedication to preserving this unique terroir, and would pair wonderfully with a hearty beef roast to fully appreciate the complexity of the grape.
