“This wine, crafted by the esteemed Rui Roboredo, clearly demonstrates a near-religious dedication to detail. The hand-harvested grapes, gathered in tiny 15kg boxes – a logistical challenge, no doubt – and the meticulous temperature control (a precise 16°C) point to a serious obsession with perfection. The use of inert gas and ‘battonage’ – a constant stirring to keep the lees – imbues the wine with a remarkable complexity, almost tangible on the palate. It’s a supremely elegant and persistent white, ideally paired with fresh oysters or grilled fish.”
