Catarina For this rosé, two grape varieties were selected: the emblematic Castelão (75%), one of the most important in the Setúbal Peninsula region, and the iconic Cabernet Sauvignon (25%), the grape used in famous Bordeaux wines, the most well‑known and widely distributed in the world, which also gives rise to the renowned Quinta da Bacalhôa. After a careful sampling of the grapes in the vineyards, the harvest dates are set. The grapes are brought to the cellar, cooled and gently pressed; the resulting must, after clarification, ferments at low temperatures (10–12 °C), achieving a very slow fermentation aimed at preserving the primary aromas of the grape varieties. The Castelão variety contributes aromas of red fruits such as strawberry and blackberry. The Cabernet adds aromas of violets and forest fruits. Allergen information: Contains sulfites. SKU: 106206
