The winemaking process, deliberately slow with 48 hours of settling and extended lees stirring (batonnage), seems almost a small act of rebellion. This 45-month batonnage clearly contributes to a complex aromatic profile, best enjoyed perhaps alongside a grilled white fish with lemon and bay leaf – a truly deserving 89-point wine.”
