Grapes from the Chateau D’Esclans vineyard, primarily Grenache and Vermentino. Harvest from sunrise to noon. The grapes are classified electronically with a digital eye and manually three times. Despiking and gentle crushing at 7‑8 °C to prevent oxidation. No maceration. Partially pressed juice is fermented in semi‑molds (600 L barrels) and stainless steel, both with temperature control. Contains sulfites.
