The producer's dedication to frequent pump-overs (three times a day!) points to a desire for absolute tranquility. And the fact that only the “best” parcels undergo malolactic fermentation in oak barrels suggests a touch of exclusivity. Expect some lovely, fresh fruit notes, which would pair beautifully with patés or a hearty beef roast.
