This Charmat Prosecco, crafted from grapes sourced across the DOC Prosecco zone, is a masterclass in understated elegance. The growers, employing a rather sensible, traditional approach, deliver fruit picked towards the tail end of August/early September, benefiting from that lovely Adriatic chill and soils of clay and sand. The winemaking, held politely at 18°C, results in a clever blend and a second fermentation – the Charmat method – creating a remarkably refreshing wine. It’s light, bright, and utterly perfect alongside some seafood and a dip… a little slice of the Adriatic, wouldn’t you say?
