The Scosciamonica de ColleMassari is a sweet, elegant Vin Santo Occhio di Pernice Montecucco DOC. By means of the dehydration (“appassimento”) process, most of the fruit’s water is removed, concentrating the sugars during pressing. This yields delightful aromas of sultanas, plums and dates, enriched with spicy nuances from its time in wooden barrels.
