This Conde Vimioso Sommelier Edition clearly took itself very seriously – and with no time to waste. The grapes were chilled to 5°C, indicating a real dedication to precision, while the 8-day skin contact at 6°C was undoubtedly a heartfelt tribute to the Arinto grape. Maturing in French oak barrels for 10 months ensured the fruit is fully integrated, yet retains that characteristic acidity. A wine that deserves a good fish dish, perhaps grilled white fish or even a classic Bacalhau à Brás to really bring out its complexity.
