This Douro rosé from Casa Vallegre certainly seems to have been brought to heel. Following a meticulously chilled pressing, the juice underwent a process that, we’re told, prompted a serious rethink. Fermentation, carefully temperature-controlled, has yielded a dry, rounded wine with well-balanced acidity and a pleasingly lingering sweetness – perfect with grilled fish and fresh herbs, wouldn't you agree?
