This Crasto DOC is delightfully fussy – it clearly has high standards. The grapes, harvested in hefty 22kg boxes, undergo a rather meticulous selection process. Fermentation in stainless steel suggests a serious approach, though the 15% aging in French oak barrels certainly adds a touch of refinement. The result is a deeply ruby wine, boasting violet aromas and a promise of persistent wild berry flavours. Remarkably balanced with smooth tannins and freshness, it’s perfect with game or sheep’s cheese.
