Curral Teles Curral Teles is where our cellar is located. In these wines the human touch is paramount—from grape variety and planting methods to vinification and ageing. Produced in limited quantities that capture the cellar’s experiments, they are not made every year. They are classified with Greek alphabet letters in homage to the experiential learning of ancient Greek academies. DOC Douro. Located in the Upper Douro. The wine derives from the 2020 and 2021 harvests. Vinification: The technique employed by Romans and Cistercian monks—whole red grapes are crushed for three hours in a calcatório. They are then pressed on a vertical press, and the must ferments and ages for eight months in a cement vat. Additional data: pH: 3.74 Residual sugar: < 2 g L⁻¹ Production: 2,000 bottles.
