This D.Graça Rosé, hailing from the Douro, clearly experienced a rather demanding winter during its ripening. The meticulous harvest, coupled with the painstaking gravity-separated must draining, speaks to a truly thoughtful process. Fermented at a cool 16°C in stainless steel, with a natural winter-induced clarification, it’s a wonderfully traditional approach – almost a ‘winter spa’ for the wine. Expect a certain enigmatic quality and it would pair beautifully with grilled fish or a vibrant berry salad.
