The whole-cluster fermentation hints at a delightfully rebellious streak, while those five days of stainless steel maceration suggest a producer not afraid to embrace the contemporary. Remarkably, despite this initial boldness, the aging in steel and the lack of filtration deliver a truly vibrant acidity and a texture that stands the test of time. Perfect with grilled fish, or, if you're feeling particularly adventurous, a good Serrano ham.
