Doravante “A vineyard, a wine” Old and hillside vines, with different exposures and clay soils mixed with limestone marl, produce wines of great diversity and identity. The working philosophy focuses on interpreting the particularities of each plot and faithfully expressing them in the wine, through minimal‑intervention enology and a differentiated approach in the cellar. This wine comes from a mixed vineyard where Baga and Touriga Nacional coexist, being harvested on the same day and vinified together in an oak cask, where aging also takes place. Fermentation includes about 20 % whole bunches and prolonged skin contact, but with very gentle extraction, for roughly a month, followed by aging in the same cask until bottling. The result is an Atlantic‑profile wine, with great freshness, elegance and aromatic complexity, marked by delicate fruit, vegetal, floral and slightly peppery notes. It presents a balanced structure, tension and precision, coupled with a fine and enveloping texture.
