Duque de Viseu Duque de Viseu Tinto da Quinta dos Carvalhais is a wine with a perfect balance between aromas and the softness of red fruit, thanks to its aging. After the grapes destined for vinification were received, a preliminary de-stemming was performed, followed by gentle crushing, with the musts being gravity-fed into stainless‑steel fermentation tanks with automatic temperature control and pumping, where it fermented for about six days. During that period it underwent several pump‑overstays to gently extract aromas and phenolic compounds from the skins. At the end of fermentation the wine was transferred to storage tanks, and the skins were pressed in pneumatic presses to gently extract the contained wine. The different grape varieties that gave rise to this wine were vinified separately. Immediately after malolactic fermentation in stainless‑steel tanks, a small portion of the batch was selected for ageing in used oak barrels, where it remained for 12 months. The remainder aged in stainless‑steel vessels, subject to regular cleanings and controlled oxygen injections to ensure maturation within the desired parameters. Like all fine red wines from the Dão, Duque de Viseu has a very long bottle life, remaining in good drinking condition for up to 10 years. The bottle should be kept on its side in a cool, dry place.
