“This Encoberta, hailing from the charming Penalva do Castelo, is a genuine tribute to the rustic character of the Dão region. Born from vineyards with a venerable age and granite and clay soils, this red blend – featuring a touch of Jaen, Alfrocheiro, Touriga Nacional and Tinta Roriz – invites you on a truly sensory journey. Fermented with indigenous yeasts and employing 35% whole cluster, alongside a 30-day maceration, it delivers a distinctive texture and remarkable complexity, setting it apart from the more polished reds of the Serra da Estrela. Maturation in 35% used French oak barrels, with natural stabilisation, subtly refines the aromas of black fruit and spices, culminating in a lingering, slightly tannic and full-bodied finish. A fantastic pairing with smoked meats or game dishes.”
