The Dégorgement process was carried out in 2024. This process involves freezing the neck of the bottle to remove the lees left over from the second fermentation, which takes place in the bottle, in accordance with the Traditional Method of sparkling wine production. Made from grapes grown in the vineyards of the Tenuta Montenisa estate, this wine is the result of a careful selection of the finest Chardonnay grapes, together with a small percentage of Pinot Blanc. The outcome is an elegant cuvée with refined freshness. It has a pale yellow colour, a creamy mousse, and a fine, long-lasting bead. The nose is fragrant and unmistakable, with pleasant notes of flowers and fruit, such as apple and white peach. The palate is vibrant and fresh, with good balance and great elegance. The Antinori family has devoted itself to winemaking for more than six hundred years. In 1385, Giovanni di Piero Antinori became a member of the Arte Fiorentina dei Vinattieri, the Florentine Guild of Vintners. Throughout its long history, spanning 26 generations, the family has always managed this activity directly, making innovative and sometimes bold choices while maintaining an unwavering respect for tradition and territory. Tenuta Montenisa is located in the heart of Franciacorta, on the outskirts of the village of Calino, the crown jewel of this gentle part of Italy, where ancient palaces, convents, abbeys and churches scattered across green hills and tawny valleys have witnessed centuries of history.
