The Hehn Family Brut is a highly versatile sparkling wine thanks to its balanced dosage and crisp acidity, making it suitable for all types of consumption. It originates from vineyards located at 700 m altitude on gentle southeast‑facing slopes. The soils are derived from metamorphic slate series with quartz outcrops, featuring a sandy‑clayey texture with some stoniness. Winemaking: Grapes, harvested into 20‑kg boxes, were gently crushed without destemming in a pneumatic press, and the must was immediately pumped into stainless‑steel fermentation tanks where the base wine ferments. The wine was then bottled and placed in a cool cellar for the second fermentation according to the classic method, followed by “dégorgement à la glace” in the bottle stage. Fermentation temperature: 15–17 °C (base wine). Fermentation equipment: Stainless‑steel tanks with a refrigeration jacket (base wine). Stage in stainless‑steel tank: ~1.5 years. Stage in bottle on lees: over 24 months. Enology: Marcos Hehn.
