This Favilla Moscatel seems to have firmly believed in letting the grapes reach maturity with impressive speed. The insistence on complete délestage and skin contact – a pursuit of intensely concentrated aromas – coupled with a daring interruption of fermentation using grape spirit, delivers a high alcohol content and a generous dose of residual sugar, undoubtedly pleasing the most discerning palates. A wine that, frankly, demands a good Manchego cheese and some cured bay leaf jam.
