Following a gentle pneumatic pressing, the juice spends a cool 24 hours in stainless steel tanks before ageing for eight months in French oak barrels. The extended, carefully controlled fermentation – between 10°C and 14°C – undoubtedly contributes to the wine’s complex character. The result is a white showcasing notes of peach, pineapple, and a touch of tropical fruit, hinting at a vineyard with a fascinating past.
