Produced exclusively from the Bical grape, sourced from certified organic and biodynamic viticulture, Nossa Calcário Branco precisely expresses the identity of the calcareous soils where it originates. It displays an intense, bright straw‑yellow hue with greenish reflections. The aroma is dominated by strong minerality and a faint smoky note typical of limestone, wrapped in nuances of ripe pear – a hallmark of Bical – and delicate hints of dried fruit. With time in the glass, notes of thyme and honey emerge. On the palate it is elegant and creamy, with an enveloping texture and pronounced minerality translated into a subtle Atlantic saltiness. It is wide and structured, ending long and precise, with notes of ripe fruit slightly candied. A wine of great gastronomic versatility, ideal with noble fish, stewed veal, game birds or aged cheeses. With excellent ageing potential, it can mature harmoniously for about ten years. Filipa Pato embodies the old saying “a son of a fish knows how to swim.” Though she followed in her father Luís Pato’s footsteps, even academically, Filipa always sought her own world and project, where she could showcase her ideas and rise on her own terms. The 2001 harvest, a great year for Bairrada, provided everything she needed. Today her wines are the result of Filipa’s innovative and brilliant spirit, and have rapidly become successful both nationally and internationally.
