Freixo SUB-REGION Redondo VINTAGE AND STAGING Arinto (35 %), Alvarinho (35 %) and a blend of Sauvignon Blanc, Chardonnay and Riesling (30 %). The Alvarinho, Arinto and Sauvignon Blanc grapes were harvested during the cool mornings on the slopes of Serra d’Ossa. After a 24‑hour skin maceration they were destemmed and pressed. Fermentation took place separately for each variety at low temperatures, followed by a four‑month ageing period with bâtonnage in new French oak barrels. After ageing in an underground cellar under ideal temperature and humidity conditions, the lot was finished, filtered and bottled still young, preserving all the fruit and freshness. An additional six‑month bottle ageing followed. CONSUMPTION AND LONGEVITY Serve at 10 °C. It offers great gastronomic versatility, harmonising well with fresh fish dishes, sushi and salads. It also surprises when paired with game, traditional meat dishes, or oriental cuisine rich in spices and aromatic intensity.
