This Gáudio Clássico Vegan is clearly a wine that enjoys a bit of pampering. Following a careful “conditioning” at 10°C, the Aragonez and Touriga Nacional grapes, bolstered by Alicante Bouschet, undergo a rather demanding “conical” fermentation – quite a test for the grapes! The outcome is a wine that matured for 7 months in new Seguin Moreau barrels, delivering a noticeable sweetness and complexity. Twelve months bottle-aging is a true indulgence, rewarding the palate with a velvety texture and aromas undoubtedly influenced by the Seguin Moreau’s expertise. Pairs beautifully with roasted rabbits or aged cheeses.
