This Giz Vinhas Velhas, hailing from the Bairrada and driven by Baga, is a beautiful demonstration of patience paying off. Following a traditional fermentation – complete with a touch of ‘soul’ from foot treading – it spent a frankly excessive 20 months aging in new and old French oak barrels, resulting in a wine with a pronounced mineral character and a lingering finish of cedar and juniper. Remarkably elegant and complex, it’s the structure and longevity of this Baga that truly captivate; a wine deserving of careful consideration, particularly alongside a robust red meat or a mature cheese.
