Hand-harvested with meticulous care, it’s spent a generous 24 hours on cold maceration, lending it a wonderfully thoughtful character. Fermented in new French oak barrels, it’s gained a welcome layer of complexity. Eight months of batonage have delivered a luxuriously smooth texture, perfect for pairing with grilled fish and lemon, or perhaps a vibrant seafood paella.
