This Encruzado from Herdade da Candeeira, grown on the slopes of Serra d’Ossa, is a bold statement. The extended, grape-membrane maceration at 10°C, combined with a month of battonage, gives it an extraordinarily velvety texture – almost like silk. It delivers a fresh, stony character reminiscent of the Serra, alongside a subtle citrus lift from Sicilian lemons. Simply put, it’s a wine of elegant restraint, perfect with a grilled white fish, perhaps sea bass with lemon rice.
