This wine from Herdade das Servas, grown on limestone slopes with a clear sense of history, delivers a robust experience. The hand-harvested grapes, coupled with a prolonged skin contact – a full 48 hours! – clearly aim for a wine of body and intensity, driven by the expressive qualities of grapes like Touriga Nacional and Petit Verdot. Following fermentation in new *spin barrels*, a 24-month aging in French oak has undoubtedly refined the wine, yet retains a distinct personality. It’s ideally suited for bold red meats, strong cheeses, or perhaps a hearty sausage – but don't forget to decant it first to fully appreciate the complexity it’s promising.
